The fam went to a cookout on Sunday hosted by Shane’s childhood BFF, Frank. It was a lot of fun and I am always very very thankful for time spent outdoors (not in a public place). Also, some dude made a hammed duck in a smoker, which I don’t even understand, but it was the best meat I’ve ever had.

Anyways. Frank made these fantastic beans that I tried to replicate. I asked him for the recipe on Facebook, but apparently people from Montana have better things to do than reply to wall posts. My beans turned out different from Frank’s, but still delicious AND the entire meal cost under $5 to make. So, go me. 

Ingredients:

1 small bag dried pinto beans

1 small can diced green chiles

1 onion, diced

4 slices of bacon

4 cloves of garlic, minced

4 cups liquid (water, vegetable broth, chicken broth, whatever)

SPICES (Adobo, onion powder, lots of cumin, red pepper flakes, salt, pepper)

Step 1:

Rinse the beans, discard the bobo looking ones, and soak overnight in water.

Step 2:

Chop up your onion/garlic/bacon, open up your can of chiles, and dole out your spices

Step 3:

Throw all the stuff from step 2, the beans and 4 c of liquid in a pot. Bring to a rapid boil then cover and reduce to simmer until the majority of the liquid is absorbed. Stir occasionally. This took around 2 hours.

Step 4:

Eat it. Toss in half an avocado and some tortillas and you’re set.
